Making your own pasta is easier than you think. Try our recipe below. If you don't have a pasta machine, the dough can be rolled out to your desired thickness, and cut with a pastry wheel or knife into long noodles. Hang pasta on our FLORENCE KITCHEN PASTA DRYING RACK and continue cooking as directed. |
Giovanni's Easy Fettuccine Recipe |
Put flour, egg and salt into food processor and pulse until mixed together. Add water, a little at a time, just until dough comes together. (Humidity and moisture content of flour will affect how much water is needed.) Remove dough from processor. Using as little flour as possible, knead dough for a minute. Form dough into a ball, wrap in plastic and let it "rest" in the refrigerator for 30 minutes. Begin boiling water for the pasta. Lightly flour a pastry cloth or wood counter top and roll out the dough into a rectangle. Cut it into three sections and feed each section into a pasta machine using the Number 6 setting. Put each section through the wide noodle adapter on pasta machine. Place noodles onto pasta rack rods as you complete each section of dough. When water has reached a rolling boil, remove one side panel from pasta rack while holding the rods and remaining panel securely. Slide noodles into water and cook for 1 to 2 minutes. (Test after 1 minute. This pasta cooks fast!) Toss with a little butter or olive oil and parmesan or romano cheese, or add your favorite pasta sauce. Enjoy! |
